During the firing of the rice, it is not uncommon for the rice grains to ?pop? not unlike popcorn which is why it is often referred to as "popcorn tea". This tea produces a light brownish yellow liquor. Sencha is the quintessential everyday tea of Japan. Literal Translation is ?roasted tea?. In the 18th century, a tea seller in Uji, Kyoto, Nagatani Soen adapted the method of steaming for making the new tea. He developed a highly original method of elaborately rolling and rubbing the steamed leaves into needle shapes on a drier. This made it possible to brew instantly a fragrant tea with a good flavor in a teapot.
